Unrefined day

I had made up my mind to have a day with no white stuff.  And I stuck with it all day.
Breakfast: banana latte, tofu scramble, toast and PB.
Lunch: spinach and lettuce salad, chipotle mustard dressing, pecans, fresh raspberries
Snack: Almonds & cashews
Dinner: spinach and cashews with korma sauce and cheese, brown rice, red wine

Chipotle mustard dressing:

1 Tablespoon brown mustard
3 tablespoons cider vinegar                                                                                                                                                                                        1 tablespoon olive oil
1 chopped chipotle pepper
Teaspoon agave syrup
Mix all above ingredients together with a dash of ground black pepper

Frugal cooking hint: make this dressing when your mustard jar is almost empty (with about 1 tablespoon left). Add the rest of the ingredients, put the lid on, and shake.  That way you can utilize all the mustard, and the container cleans out easily for recycling when you’re finished with the mustard.
